Today's recipe is gnocchi made of tofu. A very simple recipe, as usual :) I chose to fry my gnocchi to get a finer color, but that is optional. Very yummy and I served them with ratatouille.
Tofu Gnocchi
250 g fast tofu
0,5-3/4 dl mjöl
3 msk näringsjäst
1 msk torkade örter
salt, efter smak
svartpeppar, efter smak
Mixa tofu med en stavmixer. Tillsätt resterande ingredienser och mixa tills du har en slät, tjock smet. Forma smeten till gnocchi och om man vill kan man trycka med en gaffel på dem. Koka upp vatten och salt i en kastrull och lägg gnocchi i det kokande vattnet. Låt dem koka tills de flyter upp, ca 3-4 minuter. (Jag valde att efter detta steka dem ytterligare i en stekpanna för att få en fin stekyta på dem, men det är inget som behövs göra.) Servera gnocchi med en god sås.

1 tbsp dried herbs
salt, to taste
black pepper, to taste
Mix tofu with a hand held mixer. Add the remaining ingredients and mix until you have a smooth, thick batter. Form the batter to gnocchi and, if desired, press with a fork on them. Boil water and salt in a saucepan and add gnocchi to the boiling water. Let them boil until they flow up, about 3-4 minutes. (I chose to fry them further in a frying pan to get a nice color on them, but this step is not a must.) Serve gnocchi with a good sauce.
