Do you eat sugar-free and gluten-free, then these muffins are for you. Even if you don't, I think you could try to bake these. They are not too sweet, so you can if you want increase the amount of sweetener. I topped mine with a lucuma sauce (lucuma powder mixed with water). Kanelbullemuffins
6 st
2 msk smält kokosolja
1/4 dl osötad mandelmjölk
1 tsk kanel
1 tsk kardemumma
1 krm vaniljpulver
1 msk sukrin
0,5 msk fibersirap
1/4 dl kokosmjöl
1/4 dl mandelmjöl
1 tsk bakpulver
1,5 msk fiberhusk
2 ägg
2 äggvitor
Sätt ugnen på 200 C grader. Blanda den smälta kokosoljan med mandelmjölk, kanel, kardemumma, vanilja och sukrin i en skål. Vispa ägget och äggvitorna fluffigt och tillsätt mandelmjölkblandningen. Blanda sedan i de torra ingredienserna. Ställ åt sidan i 5 minuter. Fördela smeten i 6 små muffinsformar och grädda i ugnen i 10-12 minuter.
Cinnamon Bun Muffins
6 pcs
2 tbsp melted coconut oil
1/4 dl unsweetened almond milk
1 tsp cinnamon
1 tsp cardamom
a pinch of vanilla powder
1 tbsp sukrin
0.5 tbsp fiber syrup
1/4 dl coconut flour
1/4 dl almond flour
1 tsp baking powder
1.5 tbsp fiber husks
2 eggs
2 egg whites
Preheat the oven to 200 C degrees. Mix the melted coconut oil with almond milk, cinnamon, cardamom, vanilla and sukrin in a bowl. Beat the egg and egg whites fluffy and add the almond milk mixture. Then mix in the dry ingredients. Set aside for 5 minutes. Divide the batter into 6 small muffin cups and bake in the oven for 10-12 minutes.
