I found a recipe for lchf fudge and made them. They are very smooth and have a nice taste of gingerbread. I think I did not let my fudge simmer long enough, because it was not firm to cut it into pieces. So I had to roll the mixture into balls instead. Yummy even so, of course. Serve them straight from the fridge.
Gingerbread Fudge
2 dl heavy cream
50 g butter
2 tbsp sukrin gold
0.5 tbsp gingerbread spice
Put all the ingredients in a saucepan. Let simmer (not boil) for 20 minutes. Stir occasionally. Pour the mixture into a small form lined with parchment paper.
Pepparkaksfudge
2 dl vispgrädde
50 g smör
2 msk Sukrin gold
0,5 msk pepparkakskrydda
Lägg alla ingredienser i en kastrull. Låt sjuda (inte koka) under 20 minuter. Rör runt ibland. Häll blandningen i en liten form klädd med bakplåtspapper.
